Now that Autumn is just around the corner, it's time to switch up that breakfast menu and whip up a batch of these healthy, no sugar, apple cinnamon pancakes! These sweet stacks are loaded with apple flavor and a balanced cinnamon burst, then topped with a caramel-like layer of gooey apples. The best part? They're sugar free, gluten free, low in carbs, and higher in protein to keep you full throughout the day.
Throw on your jumper and hop into a pile of leaves, because, yes you know what I’m saying: the autumnal equinox is now only days away now! This means it’s time to bring out those plaid leggings and sweaters, and get ready for all things apple, cinnamon, pumpkin and pumpkin spice!
For me, the best part of autumn (besides everything pumpkin spice) is the apple season. I just can’t help but try to incorporate the copious varieties of apples into every meal and dessert possible.
Pumpkin Spice Everything
And… this week I couldn't help but start all the autumn fun as soon a possible. If Starbucks and Dunkin Donuts can release all of their Pumpkin Spice goodies early, then why can’t I start my fall baking early?
Of course, where better to start incorporating the fall season into my life than my fave Saturday morning breakfast, pancakes! Yep… when it comes to weekend breakfast, pancakes are where it’s at!
Oh and… yes, if you know me, then you know I'm a healthy baker, always trying and testing out the best sugar-free and healthy alternatives recipes to classic desserts and goodies that we all know and love.
Sugar-Free Cinnamon Apple Pancakes
So yes, this week I’m sharing with you my recipe for the best sugar-free apple pancakes that you’ll ever try. Perfectly fluffy and soft pancakes that can even stand on their own or topped with a dreamy ooey, gooey caramel-y like apple topping. It won’t only hit you with cozy autumn nostalgia of pumpkin picking, psl sipping, and hay ride fun, but you can also call it breakfast, any time of year!
Making a Sugar-Free Cinnamon Recipe
This soul-warming fall breakfast for cozy weekends, is not only delicious and guilt free, but also easy to make, incredibly versatile, and made with very little ingredients, which are mostly pantry staples and apples!
Gosh and they’re only made in two steps! Hello, easy, yummy and cozy breakfast!
The batter is lightly sweetened with no added sweeteners with subtle notes of cinnamon and subtle spices aroma and thanks the freshly grated apple, it adds a divinely well rounded overall texture and background flavor in every bite. Plus, these pancakes cook with at least four pancakes on the griddle at a time into quick light and fluffy bundles of joy!
And then to top it all off, as I mentioned earlier, I have my sugar-free, warm, soft, slightly gooey, healthy skillet cinnamon apples recipe, ready to coat your pancakes with apple-y cinnamon galore. Its literally so good that you could skip the pancake and eat it with a spoon or fork!
How to serve you Sugar-Free Apple Cinnamon Pancakes
Serve warm with my warm healthy skillet cinnamon apples and/or whatever toppings you like chopped nuts or unsweetened peanut butter.

Sugar-Free Apple Pancakes Recipe + Healthy Skillet Cinnamon Apples

Servings: 6-8
INGREDIENTS:
For the batter:
- 2/3 cup rolled oats
- 1/2 cup of grated apples
- 1/2 cup egg whites
- 1/2 cup cottage cheese or unsweetened vegan yogurt
- 1/4 cup applesauce
- 1 teaspoon baking powder
- 2 teaspoon cinnamon
- 1/2 tsp ground nutmeg
- 1 pinch salt
- 1 tsp pure vanilla *optional
- 1/2 tsp apple cider vinegar *optional
- 2-5 drops liquid pure stevia *optional
For the cinnamon apples:
- 1 diced apple, peeled and cored
- 1/2 tbsp coconut oil
- 1/2 tsp cinnamon more as needed
- Splash of cold water or apple juice/cider
- Pinch of salt *optional
- 2-5 drops liquid pure stevia *optional
HOW TO MAKE IT:
- In a blender or food processor add in all your batter ingredients other than your grated apples and pulse or process until a quite smooth and thick batter forms. Fold in the grated apples.
- On a low-medium heat, melt a slither of butter or use natural non-stick spray. When the pan is hot, using a quarter cup scoop at a time, pour batter onto a pan. You should make around 8 small pancakes. Cook each pancake until the edges of the pancakes are solid enough to place a spatula underneath and flip and cook for about one to two more minutes.
- While your pancakes cook, make your cinnamon apples by adding diced apples and all the other cinnamon apples ingredients into a small saucepan. Cook over a medium heat, stirring frequently, until the apples are your desired tenderness. Serve pancakes with warm cinnamon apples, drizzle seed or nut butter or unsweetened cream.
NOTES: I use Granny Smith apples in this recipe and cooked them for about 5-7 minutes. Mine were soft and fork tender. To store the pancakes, use separate sealed storage containers and store in the fridge for up to 4 days.
