Sugar-Free Vegan Protein Pancakes

Fluffy, vegan, decadent, sugar-free, made with only a few basic ingredients, and protein-rich, you’re not going to want to miss out on whipping up a batch of these pancakes!
With over 3 grams of protein and under 100 calories per pancake, these vegan protein pancakes are super healthy and will give you a healthy dose of protein. These protein pancakes are ready in under 15 minutes, so they can make for a super easy post-workout protein meal or a great quick protein-packed breakfast that’ll keep you full all day long.
A Word on Pea Protein
The protein powder I use in this recipe is one of my favorite protein brands: Naked Nutrition pea protein.
Their pure pea protein powder has only one ingredient: pea protein. And that’s the way it should be. No artificial flavors or fillers.
I’m usually not a fan of protein powders because they usually have a terrible aftertaste, and are loaded with caffeine, synthetic flavorings, and artificial sweeteners. However, Naked Nutrition pea protein is pure pea protein, and free of additives and sweeteners. Besides having peace of mind with what I am eating, this protein has a very NEUTRAL TASTE, making it great for incorporating into these pancakes and many protein-based recipes.
What I love about pure pea protein in general is what an incredibly high-quality vegan protein it is. It’s easy on our digestion and rich in iron and arginine. Plus, pea protein contains all nine essential amino acids that our bodies cannot create and must get from food.
Additionally, this recipe is completely sugar-free as I only sweeten these vegan protein pancakes with Lakanto pure monk fruit sweetener, which is zero-glycemic, zero-calorie, and an all-natural sugar substitute.
Honestly, I used to only eat pancakes on a Saturday morning but with the incredible protein benefits and how quick and easy this recipe is, these pancakes are now a regular occurrence in my diet during the week.

Sugar-Free Vegan Protein Pancakes

Servings: 10 Pancakes
INGREDIENTS:
- 2 teaspoons apple cider vinegar
- 1 cup of non-dairy milk of choice
- 1 cup all-purpose flour
- ⅓ cup Naked Nutrition Pea Protein Powder
- ½ teaspoon salt
- 2 tablespoons of Lakanto monk fruit sweetener or sweetener of choice
- 1 tablespoon baking powder
HOW TO MAKE IT:
- In a small mixing bowl, whisk milk choice and apple cider vinegar and set aside. In a separate large mixing bowl, whisk together the dry ingredients.
- Stir the milk mixture into the dry ingredient bowl until a thick pancake batter forms. It should be thick and there should be no lumps.
- Warm a pancake griddle or pan greased with a tiny bit of coconut oil over medium heat. Scoop 2 to 3 tablespoons worth of pancake batter per pancake cooking for roughly 2-3 minutes, flipping halfway through, or until both sides are golden brown. Serve warm.
