When I first came across the idea of making overnight oats, I’ll be honest here, I was a bit skeptical. I wasn’t sure of the texture or how would be creamy enough, but the concept intrigued me. So, I gave it a chance, and now overnight oats are a new favourite of mine! In fact, this recipe is now my go-to.
Although it’s not filled with a ton of toppings like many other recipes, the reason for this to allow the perfect balance of textures between the oats and the blueberry to combine.
These Sugar-Free Blueberry Coconut Overnight Oats are rich, creamy, filled with fresh berries, making for a delightfully delicious, filling meal that’ll keep you coming back for more, while still being guilt-free - no sugar in sight!

Additionally, for the best results in creating truly lightly decadent overnight oats, I personally recommend using extra-thick old fashioned oats. Old fashioned oats also work, but they aren’t my preferred option. Also, If you don’t like coconut milk, feel free to swap it out for any other non-dairy milk, and just simply add a dollop of an unsweetened vegan yogurt for creaminess.
As well, if you want a more cozy breakfast, reheat the oats in the morning for an extra cozy breakfast. This also most wonderfully melts the berries into a mega blueberry-y punch.

Sugar-Free Blueberry Coconut Overnight Oats Recipe

Servings: 1-2
INGREDIENTS:
- 1/2 cup of unsweetened almond milk
- 1/2 cup of unsweetened coconut milk
- 1 cup rolled oats (gluten free)
- 1 tbsp. chia seeds
- 1 tsp vanilla creme stevia drops (or to taste)
- pinch of salt
- 1/2 cup of fresh blueberries, pureed in a blender
- 1/2 tsp pure vanilla extract *optional
- 3 tbsp. greek yogurt *optional
For Optional Jam Center: Sugar-Free Mixed-Berry Jam Recipe (Keto, Gelatin-Free, Vegan)
For Optional Topping: Fresh blueberries, chia seeds, shredded coconut
HOW TO MAKE IT:
- Mix all ingredients together in a sealable container or jar. Set in fridge to chill at least 4 hours or overnight.
- To serve, stir and top with shredded coconut and blueberries. For warm oats, you may heat gently in the microwave for 15-second intervals. For a layered blueberry overnight oat. Layer the overnight oats in a small glass jar with chia jam in the middle. Once prepared, these blueberry overnight oats last in the fridge for 5 days. Keep them in an air-tight container.
