Sugar-Free Mixed-Berry Jam Recipe (Keto, Gluten-Free, Gelatin-Free, Vegan)
One of the foods I miss most when sticking to a low-sugar diet is jam; it just works so well with many of my favourite foods!
My first course of action when I decided to try sugar-free ‘healthy jam’ was to find some in my grocery store.
However, that didn’t work out very well.
I found that many store bough jars were sweetened with artificial sweeteners such as splenda (which are just as bad, if not worse than sugar), and the ones I did try weren’t good enough for the higher price.
Hence, I set out on my own mission to make my own jam with no sugar or gelatin (vegetarian here!).
However, no matter how hard I looked, I could never quite find a recipe that fit what I was looking for.
Either it used the ingredients I was avoiding, or it had flavour compromising ingredients like chia seeds - not that I have anything against chia seeds (they’re super healthy), but they simply changed the flavour too much.
I wanted my jam to taste like jam.
That was it. I decided to create a recipe of my very own.
I developed this recipe based on what worked for my previous sugary jams and what I thought could work in a 100% healthy new jam recipe.
I wanted to maintain texture (not too thick or runny) but not add any thickening agents you could taste, so I opted for pectin.
I used regular pectin for this recipe, but keep in mind that you may also use no sugar pectin.
