Today is day 4 of my sugar-free September recipe challenge, where I’m whipping up some delicious sugar-free recipe versions of some world’s favorite foods! I’m also eating no sugar this month too!
Today’s recipe is inspired by a little experience I had during last sugar-free September.
Around this time last year, I almost cracked and ate something sweet. I live in Florida (#gogators) where it is super… super hot, even as the end of summer nears.
I went to a local outdoor music festival, which was super fun and crazy. I packed my own snacks so I didn’t have to order any food - whenever I eat out during a no-sugar challenge I have to make sure there is exactly zero added sugar in my food.
In all the chaos of the festival and people, it would be super easy to order food by mistake with hidden sugar.
However, as the festival came to a close, the day got hotter - everyone there was totally glistening and sticky. As I was sitting near an ice cream stand, I could just smell the freshly churned ice cream and see all the people over there cooling down with my fave treat.
(For all of you who aren’t regular readers, ice cream is my weakness).
I came seriously close to cracking and ordering that cold treat, but I was able to work through this craving with my mindful practices and a little willpower, and conquer it.
Still, as soon as I got home, I just had to whip myself up a bowl of ice cream for after my dinner - but, with a healthy twist. And that’s how I made this totally sugar-free sweet treat. Yum.
Where my creamy sugar-free chocolate ice cream comes in.
Vanilla ice cream is my most favorite ice cream in all the world, but right now I'm a little obsessed with chocolate! So today, I went about making a lovely rich chocolaty ice cream that’s sugar-free, but has a non-icy taste.
Boom… I made decadent, rich, creamy, sugar-free ice cream that tastes like a chocolaty velvety swoosh in your mouth, yummmmyyyy it is fantastic.
Plus, all you need to get that decadent chocolate taste in this beautiful ice cream, is cocoa powder. Wow… this chocolaty ice cream is such a treat, that’s healthy, yippee and it cooled me down in a flash.
You will just be in love with this sugar-free creamy rich chocolate ice cream recipe. It’s made using heavy whipping cream - and using coconut instead of milk makes a perfect alternative for keto.
The fat is what gives it its rich, scoopable texture, and it can also be made with coconut cream for vegans and other concerned folks!
How to keep your sugar-free chocolate ice cream actually creamy.
That’s the problem with most sugar free ice creams - they’re usually icy and super hard to scoop (my little biceps simply don’t have the strength)! But with a little testing and the addition of xanthan gum, this recipe worked perfectly.
I suggest you eat it straight away for the maximum creaminess (it should be the texture of a thick soft serve). You can also chill it for an hour in the freezer for a bit more firmness.
If you intend to keep this ice cream overnight, I suggest you add 1-2 tablespoons of a neutral flavoured liquor, like vodka, to the ice cream base before churning. This will prevent it from freezing so hard (though I haven’t yet tried that method with this ice cream).
If you have kids, listen up: your kids will love it too!
Three of my six siblings are little and they couldn't get enough - the best part was they weren’t being poisoned by sugar and having their blood sugar levels spiked!

The Best Creamy Sugar-Free Chocolate Ice Cream (Keto, Diabetes Friendly, Low Carb, Vegan Option)

INGREDIENTS:
- 1/2 tsp xanthan gum
- 1/2 cup cocoa
- 2 cups heavy cream (or coconut cream)
- 2 cups full-fat milk (or full-fat coconut milk)
- 2 tsp chocolate or vanilla creme stevia drops (or to taste)
- pinch salt
HOW TO MAKE IT:
- Add all ingredients to a blender, and blend on high speed until slightly frothy and completely combined. Adjust flavour to taste by adding more cocoa or stevia.
- Add to ice cream maker, and churn for about 20-25 minutes, or until the consistency of soft serve.
- This ice cream is best when eaten straight away, however for a firmer consistency, allow to chill in the freezer for an hour before serving.
