Yesterday I enjoyed a seasonal, cozy bowl of pumpkin spice overnight oats, and as you may know I shared it as a part of my Sugar-Free September Recipe Challenge, where I share sugar-free recipe versions of your favorite foods once a day all month long!
Also, I’ll be eating along (so to speak) by cutting out sugar in my own diet the whole month!
Well, today is day 6, and yesterday it occurred to me while I ate my pumpkin spice overnight oats that I should share my little sister’s favorite overnight oats: my sugar-free healthy chocolate chunk overnight oats recipe!
My gosh you’ll love these fudgy chocolate oats - I don’t know why I haven’t shared them before, I make this recipe all the time.
I prepared it yesterday and it was perfect for today's breakfast.
My sugar-free chocolate chunk overnight oats keep me healthy and zero sugar, but I still feel as though I’m enjoying something scrummy and decadent for my breakfast!
It’s also super convenient, and makes me want to leap out of bed all smug and excited, all way to my already prepared breakfast! For chocolate lovers like us, it really is a dream come true - you won’t believe that bowl of fudgy heaven is sugar-free!
And these chocolate overnight oats aren’t just a great weekday breakfast.
Imagine this: having a fun, fabulous weekend, staying up watching Netflix or Hulu for lil’ too late on a Saturday night and unfortunately having to wake up bright and early on Sunday to get those last grocery and house chores done ready for the week.
But guess what?
You don’t have to make breakfast, cuz you have a mood enhancing, yummy, ooey, gooey chocolate breakfast waiting for ya! Little victory dance anyone?
My sugar-free healthy chocolate chunk overnight oats recipe is super quick to put together the night before (I’m talking 5 minutes quick y’all) and is almost like enjoying a chocolaty, rich, creamy, divine, mouth-watering pudding for breakfast, except this ‘pudding’ is healthy, mood, and energy boosting.
Thanks to the ingredients these chocolate oats are a super food breakfast!
The rolled are filled with fiber, which can help lower cholesterol, and protein. Also, the chia I packed in this recipe boost you with high in protein and omegas fats.
This combo of oats and chia will surely help you stay full.
Plus, your body will be bursting with joy from all the pure unsweetened cocoa powder providing wonderful antioxidants.
I highly recommend that you top these fudgy overnight oats with toasted chopped hazelnuts for some crunch, strawberries for a fantastic strawberry + chocolate combo, and sugar-free chocolate chunks, because why not?!

Sugar-Free Healthy Chocolate Chunk Overnight Oats (Gluten-Free, Diabetes-Friendly, Vegan Option)

INGREDIENTS:
- 1 cup milk or unsweetened almond milk
- 3/4 cup (gluten-free) rolled oats
- 1 tbsp. chia seeds
- 2 tbsp. unsweetened cocoa powder
- 1 tsp vanilla creme or chocolate stevia drops (or to taste)
- 1/2 tsp pure vanilla extract
- 3 tsbp. greek yogurt (optional)
- pinch salt
- sugar-free chocolate chunks - recipe
HOW TO MAKE IT:
- Mix all ingredients together in a sealable container or jar. Set in fridge to chill at least 4 hours or overnight.
- To serve, stir and top with unsweetend cream or sugar-free chocolate. For warm oats, you may heat gently in the microwave for 15 second intervals.
