My Sugar-Free Be My Valentine Raspberry Cheesecake Mousse Recipe is perfect for a dreamy, romantic, no sugar dessert. It’s so light and fluffy that it’s like eating sweet clouds, and is satisfying without being rich or overwhelming.
It’s totally delicious, super easy to make, and beautifully pink.
Not only do I use the raspberry for a valentine’s pink, but also for that sweet yet tartness flavor I just can’t get enough of. However, you can change out the raspberries to any fruit of your choice.

One last lovely thing about this scrummy dessert is that since this is not a packaged sugar free mousse, you actually know what you’re eating. It doesn't contain any maltitol (a sugar alcohol that is notorious for causing digestive distress and insulin spikes) like many brands.
Easily customize this romantic dessert by topping it with diced nuts or coconut flakes for extra crunch, homemade sugar free chocolate chunks or top it with homemade sugar free Nutella… yum.

INGREDIENTS:
- softened 8 oz. light cream cheese
- 1 cup raspberries, frozen, thawed, and drained
- 1 cup heavy cream
- 1 tsp. vanilla extract
- 4 drops of Pure Organic Liquid Stevia Berry Sweet Drops to taste
HOW TO MAKE IT:
- In a stand mixer or with a hand mixer, cream the cream cheese until smooth.
- Add the drained raspberries and blend together.
- Continue mixing and add the heavy, mixing on high until whipped.
- Once whipped, add the vanilla extract and Liquid Stevia Berry Sweet Drops and blend.
It makes about 3 cups total. Top with sugar free chocolate chunks and fresh raspberries.Nutrition:
